Dinner was a hit! While at work I asked hubby to take out whatever meat we had left in the deep freezer. I arrived home and found it was the Pink Wild Caught Salmon! It was “Reading Monday” so I prepared the boys a snack and turned on “Your Baby Can Read” while I started prepping dinner. More on our Homework routine later. I couldn’t remember how I prepared the Wild Caught Salmon last time so I just winged it. As for the sides most of the times I just grab a frozen steam bag of veggies out of the deep freezer! I tend to stock up on these when on sale! Directions: Thaw Pink Wild Caught Salmon in the fridge. Preheat oven for 375f. Line baking pan with foil and grease with Olive Oil, Rinse Salmon and place in pan. Drizzle salmon with olive oil, Season with Lemon pepper salt, and squeeze lemon juice. Turn and repeat. Cover pan with foil and place in oven. Set timer for 20 minutes. Throw your corn and green beans in the microwave. Use package instructions. Season corn with oilive oil, sea salt and peppercorn to taste. Season Green beans with olive oil, sea salt, peppercorn and onion powder to taste. After 20 Minutes, Uncover Salmon and place back in the oven for 4 minutes. Dinner is Ready! Tip: Take some of the drippings and pour over the Salmon. YUMMY!
